Vanilla Strawberry Chia Pudding Recipe
After much trial and error, this recipe makes perfect strawberry chia pudding!

- In a blender: add milk and strawberries and blend until smooth.
- Add the honey, maple syrup, vanilla, and salt. Blend again for one minute.
- In a medium saucepan: add your coconut milk and strawberry blend. Turn the stove to low heat, add the chia seeds and mix until they are spread evenly throughout. Stir for about 5 minutes.
- Place into 6 individual glass containers (or you can also use one medium glass dish) let it cool and chill in the refrigerator overnight. The pudding will thicken.
Serve: Top with fresh berries, pomegranate seeds, and coconut flakes.
The pudding will keep in the refrigerator for five days. I like making this about once a week to have whenever the kids are looking for a snack or a quick breakfast.
