Vanilla Strawberry Chia Pudding Recipe

After much trial and error, this recipe makes perfect strawberry chia pudding!

  • Ingredients

    Prep time: 15 minutes
    Serves: 6
    4 cups (32 oz) coconut milk
    2 cup organic frozen strawberries
    1 cup organic chia seeds
    3 TBSP organic honey
    3 TBSP organic maple syrup  
     

    3 tsp pure vanilla extract
    1 pinch of sea salt

    Optional:
    Berries of your choice
    Pomegranate seeds
    Coconut flakes

  • Directions

    1. In a blender: add milk and strawberries and blend until smooth.
    2. Add the honey, maple syrup, vanilla, and salt. Blend again for one minute.
    3. In a medium saucepan: add your coconut milk and strawberry blend. Turn the stove to low heat, add the chia seeds and mix until they are spread evenly throughout. Stir for about 5 minutes.  
    4. Place into 6 individual glass containers (or you can also use one medium glass dish) let it cool and chill in the refrigerator overnight. The pudding will thicken.  


    Serve: Top with fresh berries, pomegranate seeds, and coconut flakes.

    The pudding will keep in the refrigerator for five days. I like making this about once a week to have whenever the kids are looking for a snack or a quick breakfast.
