Crunchy Broccoli Salad

This Crunchy Broccoli Salad is a refreshing mix of crisp broccoli, juicy grapes, apple, shredded carrot, and crunchy soaked pecans and pumpkin seeds. Tossed in a light, tangy dressing with avocado oil, honey, and lemon juice, it’s a wholesome side perfect to add to any meal!

Ingredients:

  • 2 cups broccoli
  • 1/2 cup halved grapes
  • 1 cup soaked pecans
  • 1 tbsp pumpkin seeds soaked
  • 1/2 apple chopped
  • 1 tbsp avocado oil
  • 1 tsp apple cider vinegar
  • 1 carrot shredded
  • 1 1/2 tbsp honey
  • 1 lemon juiced
  • salt to taste

 

 Directions
  • Chop broccoli florets into small pieces so they blend in well with the fruit and seeds.
  • Combine all ingredients in a large bowl and allow the flavors to be incorporated. The flavors improve after a few hours of soaking in the lemon juice and honey.

This salad stores well in the refrigerator.
