 Chocolate Strawberry No-Bake Energy Bites

Makes 12-18 bites
Total time: 40 minutes

Ingredients:

1/3 cup pecans, finely chopped
1/3 cup cashews, finely chopped
1/3 cup almonds, finely chopped
3/4 cup almond butter
1/3 cup coconut oil
1/2 cup unsweetened coconut flakes
1/2 cup freeze-dried strawberries, blended into powder
1/2 cup ground flaxseed
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/4 teaspoon Himalayan pink salt

 

Optional:
1/4 cup 100% Cocoa unsweetened chocolate, chopped
1 tablespoon honey (if you like it sweet)

Directions

  1. Mix all ingredients except the nuts in a medium bowl until thoroughly combined.
  2. Add the chopped nuts and mix well.
  3. Put mixture in refrigerator for thirty minutes to one hour, to better form balls.
  4. With your hands, form mixture into one inch balls and roll them in coconut flakes.
